Sake teriyaki Ramen
Hey. Was left alone one night and made some ramen, it came out reeaaallly yummy, I liked it so much I wrote down the recipe. Enjoy. (The salmon is a recipe from Food of japan , Shirley booth)
Ramen is fantastic cause you can make it from anything, it’s also nice and simple.
Serves 1
Ingredients:
1 salmon fillet
Marinade:
1 Tbsp Soy Sauce
1/2 Tbsp Mirin
1/2 Tbsp Saké
1/4 Tbsp Sugar
Soup:
500 ml chicken/vegetable stock
2 Tsp Mirin
1/2 Tsp Sesame Oil
Soy sauce to taste. (Kikkomen soy sauce is best, but as long as it’s Light soy sauce, dark soy sauce is icky XP)
Any vegetables you want to put in (ramens great that way. I suggest; Carrots, Mushrooms, seaweed, pretty much anything really.)
Ramen (instant ramen with no flavour can be bought, if not just buy some instant ramen and get rid of the flavouring package in it.)
Salmon:
1.Mix the marinade ingredients together well. Wash the salmon and place in a flat shallow dish. Pour the marinade over the salmon and leave for around an hour (2 hours if you can) turning the salmon over every now and again to absorb as much as possible.
2. Remove from marinade (save what is left over) and place under a hot grill. Grill for about 3 minutes on each side. (time may vary depending on thickness of fish.)
Noodles:
1. Heat the stock till simmering/boiling (I suggest you use just cubes or powder. none of the good quality stock cause it’ll taste strange and quite salty) Add the mirin and sesame oil.
2. Take the left over marinade from the salmon and pour it into the stock (add as much or as little to taste) and then season with soy sauce according to taste.
3. Cook the ramen in the stock until done, put the ramen in a bowl, put any vegetable on top, pour over the soup and place the salmon on top.
